Maximum Living Morning Sunshine Breakfast Croissant
What do you get when you take all your favorite breakfast foods, including eggs, bacon and avocado, and make it into one dish? The Maximum Living Morning Sunshine Breakfast Croissant sandwich, of course.
- 2 strips Bacon
- 1 egg
- 1 croissant
- 1 tablespoon coconut oil
- ½ ripe avocado
- Chive cream cheese
- Cut the bacon strip in half and cook the bacon until medium crispy (to taste) on medium heat in a covered skillet. Break egg into a skillet, don’t break yolk. Add a tablespoon of water into skillet and cover on medium heat. Cook egg until egg white is solid and yolk is still runny.
- Cut croissant in half and lightly toast, you still want the croissant to be soft. Cut avocado half into thin slices. Once croissant is toasted stack ingredients as follows:
- Spread chive cream cheese on both insides of croissant, add bacon, avocado, egg then sprinkle with, salt and pepper to taste. Top with remaining croissant half and serve with fresh fruit.
