Maximum Living Beef Tenderloin


Recipe for Maximum Living Beef Tenderloin using ingredients found at your local Costco warehouse.


  • 2-3 lbs. Costco center-cut Beef Tenderloin

  • 1 tbs. Kirkland Signature Balsamic Vinegar

  • Kirkland Signature Extra Virgin Olive Oil

  • 1 tsp. dried rosemary

  • Kosher salt

  • Ground pepper

  • 2 garlic cloves minced

  • Butcher’s Twine

  • Aluminum foil

  • Plastic wrap


  1. Up to one day before, tie the tenderloin in one-inch intervals. Season generously with salt and pepper, cover with plastic wrap and refrigerate for at least 6 hours.  In a large bowl mix together KS balsamic vinegar, KS extra virgin olive oil, dried rosemary, minced garlic cloves. Mix together. Refrigerate until ready to use.

  2. Once the tenderloin is ready, preheat oven to 225 F and place the tenderloin on a baking sheet with aluminum foil on center rack of oven.  Remove from the oven and set aside to rest for about 10 minutes then cut away the twine. 

  3. Pour mixture over the tenderloin and spread with brush for full coverage.  Place under a broiler and broil, turn until meat is dark brown on all sides. Test with an instant thermometer for your desired temperature. I usually recommend 125F for rare and 130F for medium-rare.

  4. Remove from broiler and place on a cutting board, allowing the tenderloin to rest for 5-10 minutes. Slice into ½ inch slices.

    Chefs tip: To really round out the flavor profile of the tenderloin, serve with creamed horseradish.
